About the vacancy

<p>We are recruiting a Commis Chef Apprentice who has an interest in current food trends. You will report to the Head Chef/ Senior Sous Chef to assist in preparation and cooking in the York Racecourse Hospitality division. To ensure the kitchen operation complies with all statutory obligations and company prescribed regulations without exception. </p><p>You will train alongside our existing team of chefs learning all the basics of food preparation and cooking. The candidate should be willing to observe, listen and learn as much as possible and to aid the progression of the kitchen team.</p><p>The rate advertised in the National Minimum Wage for 16-20 year olds. This rate will increase to national minimum wage for applicants in different age brackets.</p><p>KEY DUTIES &amp; ACCOUNTABILITIES</p><p>Preparing food items in accordance with company operating procedures and senior kitchen staff.</p><p>Help to prepare, cook and present dishes.</p><p>To ensure high standards of both operational and personal hygiene.</p><p>Keep work areas clean and tidy.</p><p>Practice correct stock control.</p><p>Ensure required Temperature recording of Delivery, Storage, Refrigeration and freezers are up to date.</p><p>Ensure all food deliveries are checked daily and stored immediately on arrival to comply with EHO Guidelines and prevent cross contamination.</p><p>Check that all fridges, freezers and walk in chills are kept tidy, all food stuffs are stored appropriately avoiding cross-contamination, wrapped and date marked.</p><p>Manage stock rotation.</p><p>Comply fully with all HACCP regulations as displayed within the kitchen and detailed in the Kitchen Food Safety File and Hazard Analysis File.</p><p>The above is an outline of key duties and accountabilities, rather than an exclusive or exhaustive list of responsibilities. The post holder is expected to undertake any tasks which may reasonably be expected within the scope of the position.</p><p>Working conditions:</p><p>The contracted working hours are 40 hours a week.</p><p>One day a week on the rota for studying purposes, to be used for paper work, assessment work, site visits by HIT, skype conversations etc.</p><p>Meals supplied whilst on duty.</p><p>As an employed apprentice you would have all the same working conditions as other company employees and be entitled to sick pay after a qualifying period and 20 paid holidays a year</p>

Qualifications required: 
<p>Educated to GCSE level and have GCSE grade C/5 or Level 2 in both Maths and English.</p>

Internal transfer and promotion opportunities available. </p><p>Once you have completed the Level 2 you have the opportunity to progress to L3 and complete the Chef de Partie Apprenticeship. </p>
