Chef Academy Showcase 2023 Cookbook

Rosie Tibble Commis Chef Apprentice The Old Vicarage Baking, for Rosie, has always been an activity which she finds relaxing and stress-reducing. She has fond memories of baking jam tarts with her nan. At school, out of all the subjects she took at GCSE, she gained her best result in Food Technology because it was her favourite class. When looking into further education options, she thought about A-levels and going to college but always came back to pursuing an apprenticeship in cooking. As a Commis Chef, Rosie is gaining experience in all areas of the kitchen and aiming to specialise in the pastry section so she can take her skills home and bake for her family. Her childhood dream is to have her own patisserie! Rosie’s favourite kitchen gadget is the Pacojet for its ice cream and sorbet-making abilities. The Old Vicarage With 14 individually designed ensuite bedrooms, this hotel near Bridgnorth boasts the highest standards of hospitality with an emphasis on local produce and friendly, efficient service in a wonderful rural location. Its restaurant and bar serve modern classic British food with a twist. By giving apprentices the opportunity to gain expert knowledge, they take great pride in passing down recipes to the next generation of chefs.
