Sam Latham Commis Chef Apprentice De Vere Cranage Estate Sam’s son is the reason he became a chef. Working a regular 9-5 job he didn’t like, Sam said to himself: “I have to pursue my dreams so that I can show my son that he can follow his.” In early 2022, Sam started searching for chef jobs and was taken on by a local pub. Months later, De Vere offered him the chance to do an apprenticeship at Cranage Estate. He jumped at the opportunity to become the chef he wants to be. His dream is to open a fine dining pop up restaurant in Australia. Alongside his apprenticeship, Sam is developing his own recipes to be used on tasting menus in his own place…one day. Sam’s foodie icon is Robbie Lorraine, owner and head chef of Only Food and Courses in London. His favourite gadget is the Thermomix, a utilitarian tool for anything from herb oils to vegan panna cotta. De Vere Cranage Estate Working within the conference market, this business revolves around 24-hour conference delegates and catering for weddings and gala dinners, as well as running a restaurant and bar offering. Apprenticeships form the grass roots of this hospitality business and by developing and tutoring in a constructive way, the next generation of chefs will take the industry forward.
