Why an apprenticeship?
After working front of house as a Food and Beverage Assistant, Lily-Rose Brylka realised her true passion was in the kitchen. Inspired by the creativity and pace of the culinary world, she decided to take the next step in her career and begin her Commis Chef Apprenticeship with HIT Training.
“I wanted to do something I’ve always enjoyed,” she explains. “I’ve always loved food and wanted to start a new career in an industry I’ve always wanted to work in.”
Since starting her apprenticeship in May 2025, Lily has been able to develop her technical skills and build confidence in a professional kitchen environment. Working on the starters and dessert section during service, she has learned how to manage her section efficiently, stay calm under pressure, and maintain consistency across every dish.
“I use my new skills constantly,” she says. “I’m learning new techniques every day, improving my knife skills and understanding food processes. It’s given me the confidence to take ownership of my work.”
The apprenticeship has also encouraged Lily to express her creativity. She’s now confident experimenting with new flavours and presentation ideas, contributing to menu development and helping bring fresh ideas to the kitchen team.
Benefitting my business
Lily’s growth through the apprenticeship has already made a visible impact at the Three Swans Hotel. Her confidence and technical knowledge have strengthened the kitchen team, improving both efficiency and consistency during service.
“I can now prepare and run my section on my own, which means I can help others and keep service running smoothly,” Lily says.
She’s also played a role in developing new dishes for the menu and takes pride in seeing guests enjoy food she’s helped create. “It’s really rewarding to see people enjoying something you’ve made,” she adds.
For the business, Lily’s enthusiasm and growing expertise have brought new energy into the kitchen. Her focus on quality and her willingness to learn have helped maintain high standards while fostering a positive, team-oriented atmosphere.
Looking ahead, Lily is determined to continue progressing within hospitality. “I’d love to work my way up to become a Sous Chef — maybe even a Head Chef one day,” she says. “This apprenticeship has shown me what’s possible.”

Throughout her journey, Lily has felt supported and encouraged by her HIT Training Trainer, Andy, whose guidance has helped her translate her learning directly into the workplace.
“Andy has been really supportive,” she says. “He’s helped me understand not just what to do, but why it’s important. His feedback has built my confidence and helped me improve every step of the way.”
The flexibility of the programme has allowed Lily to balance her training alongside a busy kitchen schedule, ensuring her learning always connects to her daily work. “It’s been such a positive experience,” she explains. “I’ve learned so much more than I imagined — not just about cooking, but about myself and my career.”
Lily believes her apprenticeship has given her the tools, confidence, and motivation to build a long-term career in hospitality. “I’ve grown so much since I started,” she says. “HIT Training has helped me believe in what I can achieve.”
